Microwave your tofu for 3 to 4 minutes, pressing out as much water as possible. Cook your onion and carrot in a frying pan adding little water until soft. Blend up your mushrooms, then add all your ingredients to the blender and give it a whizz up. Cover and refrigerate for 30mins. Divide into small patties and fry in olive oil or coconut oil 4 mins each side.
