Shred’s Naked Veggie Burrito
  1. Set a pan to a medium heat use fry light and cook the onions with chilli for 2 to 3 mins
  2. Add the aubergine and red lentils to the pan and cook for 5 mins
  3. Add the peppers and cook on a low heat for a further 10 mins stir in the Fajita seasoning
  4. Heat up the refried beans in the microwave for 2 to 3 mins
  5. Serve up in a bowl and top with cherry tomatoes
