Shred’s Baked Lemon Pepper Cod with Rice

  1. Marinate the cod with the lemon, oil salt and pepper.
  2. Arrange onto a baking tray with the sliced peppers and bake for 10 – 12 mins.
  3. Meanwhile, cook your rice in salted boiling water for 10 – 12 mins following the packet instructions.
  4. Drain rice and remove the cod & vegetables from the oven. Serve together and enjoy!

Cook time 20 – 25 mins.
