Fry off the mince in the oil and add the onions and garlic and fry off. Add in some tinned tomatoes along with a veg stock cube and some salt and pepper. Bring to the boil and simmer. Pre-heat the oven to 180c and add the tacos to a tray add the chilli to the tacos and top with some low fat cheddar cheese. Cook until cheese melted and serve.
