Shred’s Hash-brown & Eggs

Pre heat your oven to 200c. Start by peeling your potato, once done grate all of the potato into a colander. Using your hand you want to squeeze as much water out of the potato as possible, the drier they are the crispier the potato will become. Add in your spices and add the oil to the pan, once hot add in all of the potato and pack down making a “potato pancake”. Leave to cook until the underside is golden brown.

Using a plate flip out the potato and start to cook the other side. Crack your eggs on top of the potato (try not to break), then add them to the oven for around 5-7 minutes and serve.
