In a large pan, fry the onions and garlic in the olive oil until soft, the ad in your squash and carrots, cook for a further 5 mins. add in some thyme and black pepper.

pour over your stock and simmer for 30 mins. once all cooked use a handheld blender to liquidize it to your preferred consistency

tip: add fresh chillies to pack some punch
