Shred’s creamy mushrooms on toast

  1. Melt your vegan butter or olive oil in a frying pan and add the onion, mushrooms and garlic and saute for 5-7 minutes or until the mushrooms soften and the onion becomes translucent.
  2. Serve on Toast and drizzle the Truffle Oil over the mushrooms before serving.

  1. Boil up the rice for 10 mins or until cooked
  2. Whilst the rice is cooking prep all your veg and heat up a pan with a drizzle of olive oil
  3. Add the veg to the pan with all your seasoning and fry for 5 mins
  4. Add in your cooked rice and 250ml of water with a veggie stock then leave to simmer for 10 mins
  5. Add in some soy sauce give it a stir
  6. Serve up and enjoy

  1. Make the roasted sweet potatoes: Preheat the oven to 200c. Dice up the sweet potato, drizzle it with some olive oil, season with garlic powder and chili powder, salt, and pepper, and toss.
  2. Place the potatoes onto a baking sheet in a single layer and roast for 25mins in the oven until the potatoes are tender and slightly golden brown. To get them even crispier, you can flip them over halfway through the cooking time.
  3. Sauté the kale: Heat up some olive oil and garlic in a large pan over medium heat, Add in the sliced kale4. Cook the chickpeas: Sauté some onions, peppers and garlic and a few spices, along with some taco seasoning and olive oil, add the chickpeas and cook for a few minutes.5.For the avocado cream sauce: Mix half of a ripe avocado with some Greek yogurt (sub in 1/4 cup coconut milk for vegan option), lime juice, honey, or maple syrup, garlic, red wine vinegar, olive oil, cilantro, parsley, salt, and pepper. Blend it all up. Avocado Cream Sauce!
  4.  Build your bowl and top it with the sauce. Add some of the sauteed greens, roasted sweet potatoes, and cooked black bean to a bowl and drizzle on some of the creamy sauce.

Tasty vegan shred salad and simple to make follow these steps

  1. Prep your avocado and add to a bowl
  2. Using a folk mash it up with garlic oil and lemon
  3. Set to one side and prep your mixed leaf salad using more oil and fresh lemon
  4. Add in your Cannellini beans and mix together
  5. Then serve up with your avocado on top

You could trying slicing your avocado instead of mashed

  • STEP 1

    Put the curry powder into a large pan,  then toast over a medium heat for 2 mins. Add the olive oil, stirring as the spice sizzles in the pan. Tip in the onions, apple, garlic, coriander stalks and ginger, season, then gently cook for 5 mins, stirring occasionally.

  • STEP 2
  •  Peel, then grate the sweet potatoes. Tip into the pan with the stock, lentils, milk and seasoning, then simmer, covered, for 20 mins. Blend until smooth using a stick blender. Stir in the lime juice, check the seasoning and serve, topped with coriander leaves.

Really simple and time effective meal.

Method

  1. Fry off veg first using fry light or coconut oil for 2 to 3 mins.
  2. Then add in your king prawns, noodles and sauces and cook for 5 mins.
  3. You can also add in extras such as soy sauce, rice wine vinegar or garlic.
  4. Serve and enjoy

  • Place the tortilla wrap in a pizza tray, baking sheet or large cast-iron skillet.
  • Spread the sauce evenly across the tortilla, leaving 1cm around the edges. Sprinkle with the cheese and add toppings.
  • Bake until the cheese is bubbly and golden and the base is crisp, around 10 mins. Cut into pizza slices and allow to cool slightly before serving.

To make the pizza sauce:

  • Simply mix together the tinned tomatoes, puree, passata and add salt pepper and dried basil.

Microwave your sweet potato for 6 to 8 mins then cut open and scrape out your potato & mix in all your ingredients in a mixing bowl. Add it back into your potato skin and oven cook for 20 mins on high to crisp it up.

to make this meal vegan, try adding vegan cheese or cut out cheese altogether. feel free to add extra vegetables, such as mushrooms, broccoli etc

  3. Add the fresh noodles to the pan and mix together with the sauce

  2. Remove and set aside. Tip in the diced onion and cook for 3-4 mins until soft.

  3. Add 1 thinly sliced red pepper, 2 crushed garlic cloves and 1 tbsp Cajun seasoning, and cook for 5 mins more.

  4. Stir the chicken back in with the long grain rice, add the tinned tomatoes and 300ml chicken stock. Cover and simmer for 20-25 mins until the rice is tender.

  2. Remove and set aside. Tip in the diced onion and cook for 3-4 mins until soft.
