Shred’s Chicken Jambalaya

  1. Heat 1 tbsp olive oil in a frying pan with a lid and cook the chicken for 5-8 mins until golden.

  2. Remove and set aside. Tip in the diced onion and cook for 3-4 mins until soft.

  3. Add 1 thinly sliced red pepper, 2 crushed garlic cloves and 1 tbsp Cajun seasoning, and cook for 5 mins more.

  4. Stir the chicken back in with the long grain rice, add the tinned tomatoes and 300ml chicken stock. Cover and simmer for 20-25 mins until the rice is tender.

  1. Cut the potatoes and par boil for 10 mins
  2. Meanwhile in a deep pan fry the onions, peppers and Courgette with the chilli for 4 mins using fry light
  3. The add in the sliced sausage and cook for 10 mins
  4. Add the potatoes to the pan and add in the chopped tomatoes. Stir and simmer for 5 mins
  5. Finally add the chicken stock and add cook for a further 15 mins
  6. Serve and enjoy

Shred’s Turkey chilli is simple and easy to make follow these steps

  1. Pre heat your frying pan (use fry light or coconut oil)
  2. Add in your chopped onion and cook for 2 to 3 mins
  3. Add in some fresh garlic & 1 tsp of chilli
  4. Add your turkey mince and cook until brown
  5. Add in chicken stock with 300ml of water
  6. Add in the rest of your spices & tinned tomatoes
  7. Simmer for 10 mins then add in your kidney beans the last 5 minutes of cook time
  8. Whilst your chilli is simmering boil up your carrots & green beans in a pan
  9. Serve up & enjoy

For the rice simply boil it up or you can even use microwave rice

Really simple and time effective meal.


  1. Fry off veg first using fry light or coconut oil for 3 to 4 mins.
  2. Whilst its cooking slice up your chicken breast
  3. Add in the chicken and spices and cook for 10 mins.
  4. Then add in the sauce and simmer for 5mins.
  5. Serve and enjoy with rice

  • Boil the cauliflower for around 15-20 minutes, you don’t want to overcook it.
  • Chop up onion and garlic into small pieces.
  • Using fry light, fry onion, garlic, garam masala, curry powder, chilli flakes and fry until golden.
  • Add in chopped tomatoes, salt, pepper, basil and cook for further 2 minutes.
  • Add in the cooked cauliflower, slowly stirring it in so that you do not create a mushy texture.
  • Cook for further 2 minutes and sprinkle with cheddar.
  • Serve and top with fresh coriander.
  • It’s that simple.

Quick and simple to make

Mix in bowl the tuna and light mayo then spread it over the bread. Add some salad and enjoy

  1. Cut the bacon in to slices and fry in fry light until crisp and leave to one side
  2. Crack the eggs in to a mixing bowl and whisk together, add in all the ingredients
  3. Fry the omelette for two mins each side

  3. You can also add in extras such as soy sauce, rice wine vinegar or garlic.

To make the shredded chicken


in a deep oven dish add your chicken coated in Cajun spices & throw in your chopped onion

cover with 1 pint of chicken stock & cover the dish with tin foil or a lid and cook for 45mins on low

once cooked remove add your BBQ sauce and use two forks to tear apart the chicken


serve up with your vegetables
