  1. In a bowl mash together the avocado, chilli flakes and lemon juice, leave to one side for later (season with salt and pepper)
  2. Toast the sourdough then spread with marmite
  3. Top the sourdough with the Avo mix, then slice the orange on top

  1. Poach the eggs in a deep pan for 3 to 4 mins (alternatively scramble)
  2. For quickness add the beans to the microwave for 3 mins and stir half way through
  3. Cook the mushrooms and spinach together in a pan using fry light for 3 to 4 mins

Very tasty breakfast pancakes high in protein

Simple to make

  1. Blitz together all your ingredients in blender for 30 seconds
  2. Then fry the mixture in a pan using coconut oil 2 mins each side
  3. Serve up with yoghurt, berries and maple syrup

Shred’s Turkey chilli is simple and easy to make follow these steps

  1. Pre heat your frying pan (use fry light or coconut oil)
  2. Add in your chopped onion and cook for 2 to 3 mins
  3. Add in some fresh garlic & 1 tsp of chilli
  4. Add your turkey mince and cook until brown
  5. Add in chicken stock with 300ml of water
  6. Add in the rest of your spices & tinned tomatoes
  7. Simmer for 10 mins then add in your kidney beans the last 5 minutes of cook time
  8. Whilst your chilli is simmering boil up your carrots & green beans in a pan
  9. Serve up & enjoy

  • STEP 1

    Sift the flour and baking powder into a bowl, and stir in 2 tbsp of the stevia and a pinch of salt. Pour the coconut milk into a bowl, whisk to mix in any fat that has separated, then measure out 300ml into a jug. Stir the milk slowly into the flour mixture to make a smooth batter, or whizz everything in a blender.

  • STEP 2

    Heat a frying pan with coconut oil. Use 2 tbsp of batter to make each pancake, frying two at a time – any more will make it difficult to flip them. Push 4-5 pieces of banana into each pancake and cook until bubbles start to pop on the surface, and the edges look dry.  Repeat to make 5 or 6 pancakes.

  • STEP 3

    Meanwhile, put the remaining coconut milk and stevia in a small pan. Add a pinch of salt and simmer until the mixture thickens to the consistency of single cream. Use this as a sauce for the pancakes and spoon over some of the passion fruit seeds.

Pre-cook sweet potatoes in hot oven with a drizzle of olive oil until crispy, once cooked chop into small chunks. In a pan add the olive oil and then add the onion, garlic, carrots and red pepper and fry off until soft. Once cooked add in your spices and sweet potato and then your tinned tomatoes and beans. Leave to simmer and add water to thin texture if needed. Serve with some white rice and a little vegan cheese.
