Pre heat the oven to 180c. Scoop out the inside of the mushroom and place in the oven for around 10 minutes. In the mean-time prepare the salmon and eggs. Once the mushroom is finished place the salmon into the mushroom, follow carefully by the eggs. Add salt and pepper and bake in the oven for around 6-10 minutes.
Poach the eggs first, then grill the mushrooms and tomatoes until cooked through. You can serve the salmon warm or cold, depending on preference.
Bake the mushrooms for 6-8 minutes at 180c to save cooking time later, then scrape out the inside of the mushroom and discard. Fry the onions, garlic, peppers and Quorn mince in the oil and add some fresh chilli as an option. Fry off until cooked through. Scoop the mixture into the mushrooms and add some panko breadcrumbs, bake at 200c for another 5-6 minutes or until golden and cooked through.
