Shred’s Stuffed Sweet Potato

Microwave your sweet potato for 6 to 8 mins then cut open and scrape out your potato & mix in all your ingredients in a mixing bowl. Add it back into your potato skin and oven cook for 20 mins on high to crisp it up.

to make this meal vegan, try adding vegan cheese or cut out cheese altogether. feel free to add extra vegetables, such as mushrooms, broccoli etc

  1. Pan fry the all the vegetables with garlic using fry light. For 3 to 4 mins
  2. Then add the Tuna steak and cook to desired taste
  3. Add the fresh noodles to the pan and mix together with the sauce
  4. Serve and enjoy

  1. Heat 1 tbsp olive oil in a frying pan with a lid and cook the aubergine, courgette and .

  2. Remove and set aside. Tip in the diced onion and cook for 3-4 mins until soft.

  3. Add 1 thinly sliced red pepper, 2 crushed garlic cloves and 1 tbsp Cajun seasoning, and cook for 5 mins more.

  4. Stir the chicken back in with the long grain rice, add the tinned tomatoes and 300ml chicken stock. Cover and simmer for 20-25 mins until the rice is tender.

  2. Remove and set aside. Tip in the diced onion and cook for 3-4 mins until soft.

Quick simply delicious meal

For the quinoa:

Boil in a pan till cooked (10 mins) then add garlic, chilli & soy sauce and stir through with a tablespoon of olive oil

Then get creative with the rest of the meal and serve up with a warm pita bread

  1. Boil up the eggs for 7 mins for hard boiled
  2. Leave to one side to cool off once cooked, then prep the avocado using chilli flakes and fresh lime mash it up
  3. Toast the bread, whilst
  4. its cooked slice the radish and add salt, pepper and red onion. Mix up with a drizzle of olive oil
  5. Serve up the sourdough with the avocado spread, sliced boiled eggs and the radish pickle

Add chilli and fresh lime to create the pickle and some oil

Tasty chicken salad shred style

  1. Cut your chicken in to strips and cook in a frying pan using fry light  for 10 mins
  2. Set to one side and the prep your salad and avocado
  3. Then add your chicken to the salad
  4. Serve up with a light salad dressing or balsamic and enjoy

  • STEP 1

    Mix the tomatoes (quarter them) , half of the onion, lime juice and 1 tbsp oil and set aside. Fry the remaining onion in 1tbsp oil until it starts to soften. Add the garlic, fry for 1 min, then add the cumin and chipotle and stir until fragrant. Tip in the beans and a splash of water, stir and cook gently until heated through. Stir in most of the tomato mixture and cook for 1 min.

  • STEP 2

    Toast the bread and drizzle with the remaining 1 tbsp oil. Put a slice on each plate and pile some beans on top. Arrange some slices of avocado on top, then sprinkle with the remaining tomato mixture and serve.

My go to breakfast especially when on the go, quick and easy to make

Simply Mix it all together in a pot.

or if you do have the time melt the dark chocolate over it

  1. Beat the eggs and season with salt and pepper
  2. Heat a frying pan using fry light
  3. Whilst the pan comes to heat prep your veggies and to the egg mixture and fry in the pan until cooked through
  4. 1 min before the omelette is ready add your mozzarella and chilli
  5. Serve and enjoy
