Shreds Prawn Jambalaya

  1. Heat 1 tbsp olive oil in a frying pan with a lid and cook the prawns for 2-3 mins until golden.

  2. Remove and set aside. Tip in the diced onion and cook for 3-4 mins until soft.

  3. Add 1 thinly sliced red pepper, 2 crushed garlic cloves and 1 tbsp Cajun seasoning, and cook for 5 mins more.

  4. Stir the chicken back in with the long grain rice, add the tinned tomatoes and 300ml chicken stock. Cover and simmer for 20-25 mins until the rice is tender.

  • Boil the cauliflower for around 15-20 minutes, you don’t want to overcook it.
  • Chop up onion and garlic into small pieces.
  • Using fry light, fry onion, garlic, garam masala, curry powder, chilli flakes and fry until golden.
  • Add in chopped tomatoes, salt, pepper, basil and cook for further 2 minutes.
  • Add in the cooked cauliflower, slowly stirring it in so that you do not create a mushy texture.
  • Cook for further 2 minutes and sprinkle with cheddar.
  • Serve and top with fresh coriander.
  • It’s that simple.

  1. Prepare all your veggies
  2. Heat up a frying pan using fry light
  3. Add in your chopped onions or shallots and some garlic
  4. Fry up for 2 mins, meanwhile add your veggies to a pan of boiling water and cook until soft (use a separate pan for the potatoes)
  5. Add the steak to the frying frying pan and cook for 5 mins either side for medium
  6. Once the steak is cooked add in your stock cube with 300ml of water and leave to simmer until the potatoes and veg is ready
  7. For the mash, mash up with butter and add some salt and pepper
  8. Serve it al up together and enjoy

  1. Cut your sweet potato in to fries
  2. Coat the fries in some light oil and paprika for added flavour.
  3. Place in the oven and cook on 180c for 40 mins
  4. Once nearly cooked place a frying pan on heat for 2 to 3 mins. Use fry light
  5. Add the asparagus in the pan add salt and pepper to taste. For around 5 mins
  6. Add your fish to the Pan and cook 4 mins each side
  7. Serve up and can add soy sauce for more flavour

To make the chilli

  1. Pan fry the onions and peppers with chilli and garlic for 3 mins
  2. Add in the mince and cook until browned
  3. Add in the chopped tomatoes, beef stock and all the spices then stir and simmer for 30 mins
  4. 10 mins before its cooked add in the kidney beans
  5. Serve up on top of a jacket potato

  1. Boil up the rice for 10 mins or until cooked
  2. Whilst the rice is cooking prep all your veg and heat up a pan with a drizzle of olive oil
  3. Add the veg to the pan with all your seasoning and fry for 5 mins
  4. Add in your cooked rice and 250ml of water with a veggie stock then leave to simmer for 10 mins
  5. Add in some soy sauce give it a stir
  6. Serve up and enjoy

  1. Grill the chicken for 7 mins each side (add dried spices if needed)
  2. Boil the rice and 5 mins before done add in some frozen peas
  3. Serve up with salad and grated cheese
  4. Enjoy

Quick and simple to make

Mix in bowl the tuna and light mayo then spread it over the bread. Add some salad and enjoy

  • STEP 1

    Sift the flour and baking powder into a bowl, and stir in 2 tbsp of the stevia and a pinch of salt. Pour the coconut milk into a bowl, whisk to mix in any fat that has separated, then measure out 300ml into a jug. Stir the milk slowly into the flour mixture to make a smooth batter, or whizz everything in a blender.

  • STEP 2

    Heat a frying pan with coconut oil. Use 2 tbsp of batter to make each pancake, frying two at a time – any more will make it difficult to flip them. Push 4-5 pieces of banana into each pancake and cook until bubbles start to pop on the surface, and the edges look dry.  Repeat to make 5 or 6 pancakes.

  • STEP 3

    Meanwhile, put the remaining coconut milk and stevia in a small pan. Add a pinch of salt and simmer until the mixture thickens to the consistency of single cream. Use this as a sauce for the pancakes and spoon over some of the passion fruit seeds.

  1. Blend oats, egg, egg whites, stevia, cinnamon and baking powder.
  2. Heat up the frying pan and spray with Fry light.
  3. Pour in the pancake mixture and fry until golden, flip over so that both sides are cooked.
  4. Top with yogurt and berries and sprinkle of cinnamon.
  5. Enjoy.

  1. Pan fry the sausage  with garlic and chilli in fry light until browned and leave to one side
  2. Boil the pasta for 10 mins
  3. In a oven proof dish add the pasta, sausage and all the veggies
  4. Give it a good mix and top with the cheese
  5. Place in the oven for 20 mins on 200C
  6. Serve and enjoy
