Shred’s creamy mushrooms on toast

  1. Melt your vegan butter or olive oil in a frying pan and add the onion, mushrooms and garlic and saute for 5-7 minutes or until the mushrooms soften and the onion becomes translucent.
  2. Serve on Toast and drizzle the Truffle Oil over the mushrooms before serving.

  1. Gently heat the maple syrup and blueberries in a saucepan until the berries start to release their juices, then set them to one side in the pan. Whisk the flour, almonds, cinnamon, milk and vanilla together in a bowl.
  2.  Heat a little oil in a frying pan. Dip a slice of bread into the milk mixture, shake off any excess and fry the bread on both sides until it browns and crisps. Keep the slices warm in a low oven as you cook the rest. Serve with the blueberries.

Serve with the sliced banana and drizzle with a little more maple syrup

  • STEP 1

    Sift the flour and baking powder into a bowl, and stir in 2 tbsp of the stevia and a pinch of salt. Pour the coconut milk into a bowl, whisk to mix in any fat that has separated, then measure out 300ml into a jug. Stir the milk slowly into the flour mixture to make a smooth batter, or whizz everything in a blender.

  • STEP 2

    Heat a frying pan with coconut oil. Use 2 tbsp of batter to make each pancake, frying two at a time – any more will make it difficult to flip them. Push 4-5 pieces of banana into each pancake and cook until bubbles start to pop on the surface, and the edges look dry.  Repeat to make 5 or 6 pancakes.

  • STEP 3

    Meanwhile, put the remaining coconut milk and stevia in a small pan. Add a pinch of salt and simmer until the mixture thickens to the consistency of single cream. Use this as a sauce for the pancakes and spoon over some of the passion fruit seeds.

  1. Poach the eggs in a deep pan of water for 3 mins
  2. Toast the muffin
  3. Layer the salmon on the muffin
  4. Place the eggs on top add the sauce
  5. Enjoy

For the sauce:

 

1.Melt the butter in a pan and skim any white solids from the surface. Keep the butter warm.

2.Put the egg yolks, melted butter,  tarragon vinegar, a pinch of salt and a splash of ice-cold water in a metal or glass bowl that will fit over a small pan. Whisk for a few minutes, then put the bowl over a pan of barely simmering water and whisk continuously until pale and thick, about 3-5 mins.

  1. Blend oats, egg, egg whites, stevia, cinnamon and baking powder.
  2. Heat up the frying pan and spray with Fry light.
  3. Pour in the pancake mixture and fry until golden, flip over so that both sides are cooked.
  4. Top with yogurt and berries and sprinkle of cinnamon.
  5. Enjoy.

  • STEP 1

    Mix the tomatoes (quarter them) , half of the onion, lime juice and 1 tbsp oil and set aside. Fry the remaining onion in 1tbsp oil until it starts to soften. Add the garlic, fry for 1 min, then add the cumin and chipotle and stir until fragrant. Tip in the beans and a splash of water, stir and cook gently until heated through. Stir in most of the tomato mixture and cook for 1 min.

  • STEP 2

    Toast the bread and drizzle with the remaining 1 tbsp oil. Put a slice on each plate and pile some beans on top. Arrange some slices of avocado on top, then sprinkle with the remaining tomato mixture and serve.

  1. Scramble the egg and season with salt and pepper
  2. Slice the sourdough and toast for 2 mins
  3. At the same time cook the egg in a pan
  4. Serve, enjoy!

Nice hearty breakfast to set you up well for the day

  1. Heat up a frying pan for 2 mins using fry light light
  2. Add in the sausages and cook for 10 mins turning occasionally
  3. Prep the Muffin/Bagel
  4. When the sausages are nearly cooked poach or scramble the egg
  5. Serve up with some hot sauce or English mustard

Make the porridge with almond or oat milk in the microwave for 2 to 3 mins

Once cooked top with the fruit, peanut butter and syrup
